In Ireland the brown seaweed Laminaria saccharina or Saccharina latissima as it is now known as, is hand harvested for Sweet Kelp.
However in the Far East - the species that is used for Sweet Kelp / Kombu Royale is Saccharina japonica - in China alone 700,000 MT are harvested by rope cultivation.
It uses are similar to Kelp and its taste is just a bit sweeter than Kelp.
This is the seaweed the Scottish Crofters use to feed to their sheep to give the meat a sweet taste.
